This is a bit of a take on the famous Waldorf Salad, much loved by so many. I've added a few extras that make it a great salad for the BBQ table and a healthy option for a lunch time snack. Adding some sliced roasted chicken to give it a protein for a separate meal. Another option is to use any of your favourite creamy dressings. Enjoy
½ cup Finely chopped celery
½ cup Finely sliced Granny Smith apple
¼ cup Sultanas, grapes, cranberries...any of those will work
⅓ cup Chopped walnuts
⅓ cup Fetta cheese, cut into small pieces. Make sure you get a good fetta as it really does make a difference
1 Handful of mixed salad greens
Marvick Farm Wild Lime Olive Oil, any of the Wild Lime Oils work, check them out...go to Preserves/Oils
1Into a serving dish place the salad leaves on the bottom, add the celery and apple
2Sprinkle over the sultanas, grapes or cranberries...this is optional
3Add the fetta cheese, again it's option, but I really think a good fetta just adds that extra element that really works!
4Mix the Wild Lime Olive Oil thru the salad
5Top with a sprinkling of the walnuts
6You can also add some roast chicken slices, expecially if it's going to be a meal
