With Macadamias, Lemon Myrtle and native pepperleaf

40 g Bush BBQ Lemon Pepper
150 g Roasted Macadamia Nuts
80 g Sesame Seeds
50 g Roasted Pine Nuts
2 tsp Coriander Seeds

Grind nuts coarsely in a food processor

Mix together with other ingredients

Serve with bread and a good olive oil

Coast chicken fillets with Bush BBQ Lemon Pepper by placing rub mix in a small try or plate and coast pieces on both sides..

In a heave based fry pan or skillet add 2 tablespoons of olive oil and heat

Sear both sides of the chicken pieces being careful not to buy the rub

Place seared coasted chicken pieces into a moderate oven for appox 15 minutes, depending on chicken pieces (180C) to finish. Ensure chicken is not pink in the centre.

Serve with homemade potato wedges and a fresh green salad of rocket, cherry tomatoes and fennel.
