A quick and easy damper recipe, fun to make and simply delicious
 
 3 cups Self-raising flour
 1 tsp Salt
 1 cup Water or milk or combo of both
 2 tbsp butter or olive oil, or combo of both
 ⅓ cup pitted olives with pimento
 ⅓ cup finely chopped fresh capsicum
 ½ cup grated tasty cheese
 sprinkle of oregano
 
1into a bowl add the flour and salt, mix together
 2rub in with your fingers the butter or olive oil to breadcrumbs, add the cheese and mix in
 3make a well in the middle of the flour mixture
 4with a knife, I use a bread and butter knife, slowly mix in the cup of water or milk, you might need to add a little extra  to bring it together
 5once it comes together as one big piece, make a ball
 6prepare a baking tray lined with baking paper, place your damper in the middle and flatten, it will rise
 7score the top of the damper with a sharp knife, sprinkle more cheese on top
 8bake in an oven 200C or 180C fan forced for approx 30 mint
 9it cooked when golden brown on top and sounds hollow when the bottom is tapped
