A quick and easy damper recipe, fun to make and simply delicious

into a bowl add the flour and salt, mix together
rub in with your fingers the butter or olive oil to breadcrumbs, add the cheese and mix in
make a well in the middle of the flour mixture
with a knife, I use a bread and butter knife, slowly mix in the cup of water or milk, you might need to add a little extra to bring it together
once it comes together as one big piece, make a ball
prepare a baking tray lined with baking paper, place your damper in the middle and flatten, it will rise
score the top of the damper with a sharp knife, sprinkle more cheese on top
bake in an oven 200C or 180C fan forced for approx 30 mint
it cooked when golden brown on top and sounds hollow when the bottom is tapped
