A healthy, quick and easy salad with lots of options to create your own unique take on this classic.
2 Ripe, large tomatoes, sliced
Mozzarella cheese, sliced
¼ cup Loosely packed fresh basil leaves, fresh is important here, they really do impart a great flavour
¼ cup Balsamic Glaze. I cheat a bit here and buy the glaze in the supermarket
2 tbsp Olive Oil. I use Sunrise Lime Olive Oil (available on website), it adds an amazing flavour, Your choice though
Salt and Pepper to taste
Pesto sauce, you can make it or otherwise I often buy it for convenience, its optional
1Slice both the mozzarella and tomato slices roughly the same size and place, alternating, on a plate. You can put them in a line on a long plate, or a circle on a round plate. You can apply your creative spirit a bit here and cut the mozzarella or tomatoes in a chunks and arrange on plate separately, no need to completely go with the flow.

2Roughly tear the fresh basil leaves, the smell as you do this is sooooo beautiful....just love basil. Sprinkle lovingly over the tomato and mozzarella slices.
3In a bowl mix the balsamic glaze and olive oil to create the dressing. If you're using pesto, then add it to the olive oil and put on the tomatoes separately to the. balsamic glaze.
4Drizzle the dressing over the tomato and mozzarella just before serving.
5Theres so many options with this recipe combo, add some olives, some greens, even finely sliced red onions would work too.
