Making your own Rocky Road with an Australian twist!
Rocky Road still holds a special place in my heart. I’ve added an Australian twist to flavour the marshmallow with Strawberry Gum.
My original recipe has evolved to include native ingredients that celebrate our local wild Australian native herb.
The marshmallow is infused with a Strawberry Gum, Rose, and Raspberry tea bag, paired with a classic vanilla marshmallow.
The nuts are a mix of macadamias and roasted peanuts, adding that unmistakable Aussie crunch.
Learning the traditional skills of confectionery
My first teacher in Rocky Road was an old confectioner in Brisbane. He taught the traditional way — two types of marshmallow, three different jellies, and roasted peanuts, all mixed into rich chocolate. The result was pure delight, a perfect balance of chewy, crunchy, and sweet that made every bite unforgettable.
Continuing the knowledge
After those early lessons, the journey continued overseas to Germany, where formal confectionery studies deepened my knowledge of confectionery and working with chocolate and sugar sweets. Returning to Australia brought another mentor — a retired confectioner who had spent a lifetime working with confection in the old traditional way. The work was hard yakka, but every day was a masterclass in patience, precision, and passion.
