Wild Thyme is beautiful in both flavour and aroma

A bushy plant with small aromatic leaves and purple flowers in Spring.

Wild Thyme (Prostanthera incisa), also known as Cut-leaf Mint Bush or Native Sage.

It’s a fragrant, hardy bush like its counter-part the round leaf mint or native basil.   An Australian native edible botanical plant.  Although softer in both flavour and aroma, but you still know its there!

Can you use Wild Thyme in cooking?

This aromatic herb mixes easily with other compatible herbs in your cooking to create some unique dishes.  The leaves of the plant are used, they can be fresh or otherwise dried and stored in a cool and dry place.

This amazing and aromatic Australian native herb can be used in tomato based or savoury dishes.  Fish, meat or chicken it goes with them all.  Don’t forget vegetables such as mushrooms, pumpkin, potatoes or tomatoes. If you’re after a taste of the bush, then Wild Thyme really adds that aromatic extra touch!

How to grow Wild Thyme

Often grown as a feature plant in gardens or along paths. It can be grown in full sun or part shade, but needs a well-drained soil.  If you have a plant, as with all plants, dig a hole twice as wide and the same depth as the existing root ball.  Place in the hole, fill with soil, tamp down and water well.

Wild Thyme is a quick grower if its in a “happy” position.  Can be pruned, especially if you’re after the leaves for culinary or aromatic (pot pourri) uses.  Water regularly to establish, then just keep it moist, a good soaking every now and then helps especially in the Summer months.

Whilst there’s not much to worry with pests, the wallabies did start to take a liking to my bushes, so moved them to a safer spot.  There are now a few in pots on the deck to enjoy both the aromatic perfume and the beautiful mauve flowers.

Can you grow Wild Thyme from cuttings?

Yes, you can grow from cuttings.  Autumn is a good time to do this.  Take 5-10cm cuttings of semi-hardwood from the plant, remove half of the leaves and dip the ends into a rooting hormone.  Honey is a traditional rooting option and can also  work really well.  Put the cuttings into propagating mix in a warm position.  Just spray regularly with a misting bottle to keep the soil moist.  Roots will generally take about a month to start happening.
